vinification
and maturation |
Grapes are de-stalked and subjected to a brief pellicular maceration, staying in contact with the skins for few hours. Then they are softly pressed and the obtained must is left to decant for a whole night. Then the clean part is poured, and after few more hours it begins the fermentation at the controlled temperature of 18° C. A small amount of product is left to ferment in barriques and then added to the final mass to bring a pleasant aromatic note. Refining: in bottle. |
|
Excellent as aperitif as well as whole meal wine. Very good with appetizers, egg based dishes, fresh cheeses, shell fish and sea food. Suggested serving temperature: 10 - 12° C. |
