Alcoholic fermentation at controlled T° kept between 28°C-30°C in stainless steel tanks. Malolactic fermentation takes place in barriques. Refining: in French oak barriques for a period of twelve-fifteen months. Additional twelve months in bottle. |
organoleptical characteristics |
Colour: Ruby red, very intense. Bouquet: Intense and persistent; characterized by the union of small blackberries and spicy notes from the barriques “élevage”. Palate: Of great structure and persistence, it confirms the notes picked up with the smell, characterized by dense, soft and ripe tannins. |
