POGGIO SCALETTE grounds are present about one thousand
olive trees, most of them over one century of age,
at an altitude between 350 and 450 mts over sea level (“Il
Corto” plot), which naturally inhibits the
development of illnesses, and – consequently –
no treatment is needed by the plants. |

level. Exposition: West - South - West. Soil position and composition: hilly, terrace; sandy - silty, very rich in stony fraction. Harvesting method: by hand. |

Once harvested, within a very short lapse
of time (3-4 days), the olives are taken to the Olive Press
Firm, where the crushing of the olives takes place with
“cold procedure”. The oil is then carefully kept away from
the damaging light and oxygen effects. Not filtered, natural decantation. |
