and maturation |
Grapes cold maceration
for few hours, then soft press. Fermentation in 228
litres drums - 50% new - with controlled temperature,
max 19°. “Elevage
sur lie” and “bâtonnage”
for the first 3 months. Resting in the same drums
for a total of 9-12 months and maturing for another
6 months in bottle. |
